The First Post - Lemon chicken with green beans and potatoes

Here goes nothin...


We set out on our first adventure trying to replicate this recipe we found on Pinterest.

This is what is said it was supposed to look like. Alright, looks pretty good, not faked, and sounds delish. We gave it a shot...
the majority of the ingredients gathered...


Mom, ever the recipe follower, using precisely 1 tbsp of olive oil to grease the pan. She decided later that this was too much.

"You should have used the mandolin to cut those..." -Mom



Trying to eat healthy... so I cut off the skin of the chicken breasts on all but one. Mom wanted to see if the one with skin would be better/crispier.

Ok so it didn't quite turn out like the picture but it was super yummy. All three diners agreed this was a success and would eat it again. Mom and dad thought it could probably do with much less oil and I thought maybe one lemon would have been enough lemony-ness. The chicken was super moist, even with the skin off and even after we microwaved it the next day as leftovers off the bone. 

Stuck to script: basically 100% (thanks to Mom's compulsion to follow the recipe as it is written) We did use a lot of mini potatoes instead of red potatoes though.
