Healthy Fettucini Alfredo

Look! Another recipe tricking us with cauliflower!
I will admit I was fairly skeptical about this recipe before even starting. I wasn't really sure that cauliflower could take the place of heaps of cheese and cups of cream, but we tried anyway.
This is what the recipe said it would look like. I was pleased because this didn't exactly look awesome and heavily staged and it boosted my confidence that this could work out.

The recipe lady said she used sweet potato fresh noodles. Yeah, right. We used no name.

I learned my lesson this time and didn't blend the cauliflower in broth. 

This is the leftover cauliflower that wouldn't fit into the food processor. We served it as a side. Cauliflower with a side of cauliflower.

Ok so this might be around the time the camera battery started to die. I can't be sure, but all the other pictures are missing. You can take my word for it when I say it actually did look like the picture. Surprise! A pleasant surprise. Disclaimer: I did add about a half a cup of grated parmesan because, I mean, come on. It needs some cheese. It's alfredo, for pete's sake. Anyway, it turned out great! Creamy and delicious just like the real thing. I'd definitely add the parmesan again, but you could probably skip it if you wanted. It tasted a bit salty, which I think was from the broth. You could probably use a low sodium or homemade broth or maybe half broth half water to reduce it. Also to make it healthier it would be good to use whole wheat/grain noodles. Definitely do this one if you're trying to get a significant amount of vegetables (read: cauliflower) into your diet. It's a neat trick.

Stuck to the script: like 98% because I added parmesan.
