Black Bean Burgers with Salsa Fresca and Avocado Crema

Now for something a little more exciting…
We have collected a great deal of vegetarian recipes for this week's menu in preparation of the lovely Danielle stopping by.  She wasn't able to attend this evening, but we were lucky enough to welcome our friend Eunice over instead.

Black bean burgers with salsa fresca and avocado crema! Now, this is what the website said it would look like if we were to follow the plan.

Ingredients gathered...

This is proof that I cooked the onions for the requisite amount of time as per the recipe. Mom was so proud.

*I don't like things spicy so I didn't check for/want the hot spices. By doing this, I was also able to neglect looking for other needed spices.

I mashed the bean mixture with a potato masher but it still didn't really break apart well enough. I might have cooked the beans first to make them softer for mashing. In the end, it was a messy experience.

Yummy salsa fresca! Minus cilantro which is yucky so I didn't add it to the grocery list.

Table is set! These are the cooked patties. We only cooked 4 and froze the other 4 (even though the recipe said we could only make six!)

This ended up being a great recipe even though we were lacking a lot of the spices and such. We used smoked paprika instead of regular and were missing coriander and cilantro. Mom added a small number of hot chili flakes instead of the chipotle or poblano chilis. I think I could have gone with at least the chipotle, but this ended up being delicious anyway. I used a Red Mill corn meal to dredge the patties and I think I would use a finer grain corn meal next time as it was a bit crunchy. Every diner enjoyed it and would definitely eat it again. 

Stuck to the script: maybe 85%? We didn't do to well this time with that. Mom tried. I was sneaky.
