Cauliflower and Chickpea Curry

This is something I've made a couple times in Virginia for Anthony and myself. We liked it so I thought I'd share it with the fam.

This is what it's supposed to look like. I love this lady's blog. She has mostly veggie recipes like the one we made (recipe here)


The stems looked a little green to me… not sure what that means really. Tasted fine.

Mom cheated and used a garlic press. She says this one from Pampered Chef is her favorite and she's had it for a while. I'm not sure brand loyalty and sentimentality will save her from the guilt of cheating though.

I used two tablespoons curry spice and 1-ish of garam masala because I like it so there.

Coconut milk and broth. I don't think I've ever used the full cup of coconut milk when making this before.

TA- DAAAA!

This was actually quite easy to make and didn't take very long to come together. The rice took the longest. Forty-five minutes!! It always helps too when you have someone doing half the work.  For some reason to me this tasted pretty bland this time. I didn't really do too much differently, and if anything, I added more flavors and spices. Maybe a weird broth? I'd make it again with more salt probably and maybe more curry. Mom and Dad liked it and had it for lunch today too. We're also saving some for Danielle to have at family dinner when we have a meat entree (surprise!)

Stuck to script: like 90% because of the spices… probably the most I've followed the recipe all the time I've made it before.
