Last night we invited Sweeney and Sam over to celebrate Sweeney's belated birthday. Also, I had some selfish intentions because I wanted to see them since I hadn't in a while and I wanted to try this recipe. Anthony hates butternut squash and I can never cook it for him so this is my year to squash it up
This is what the recipe said it would look like. Oooo la la! A triple picture! Lucky!
Side notes: we didn't actually use that much ricotta and oh-em-gee cheese is expensive in Canada. Especially pre-shredded cheese.
The recipe said the noodles had to be dry… This was the only method we could come up with. Mom also put another sheet of paper towel on top and rolled it up.
Spinach! Spinach everywhere! It was even on the microwave for some reason. I also took this picture right after I spilled a bunch of the squash all over the over and floor.
I actually did a better job of spreading this out after I took the picture.

Mom measured out EXACTLY 1/3 cup of filling onto each noodle. It made these cute little cups before we spread it out.
Ok Mom's rolls were perfect looking. I didn't take a picture of mine because I was less precise and it looked like I barfed up the filling onto the noodles. Mom's looks like it was done in a factory it was so nice.
We got 13 rolls even though the recipe said it would make 9. We stole a bit of filling from a few to make one or two extra cause we felt 10 or 11 wouldn't be enough for 6 people.
Pre-oven. I forgot to take a finished product and plated picture but you can take my word for it that it basically looked the same, just a bit more melty-er.
Loved this recipe. It was really simple and surprisingly easy and fast to put together (especially since I had someone to help me.) I've done a lasagna roll up before with the classic ingredients and it was so messy and not really worth the effort. Mom could not believe there wasn't some nutmeg or sage included and I have to agree it would have been a nice touch. Probably could have also used more salt and/or pepper but was fine as is. I love cheese and would have added more if we weren't trying to stick closely to the recipe. Two rolls a person was enough, especially with a side, but three would have been better so bulk up the recipe accordingly. It said to cover with foil while baking but I think it kind of prevented the cheese from melting enough and browning so I wouldn't use it next time.
Stuck to the script: like 99% because I didn't actually measure out the shallots. I used two.
