I don't know about you, but to us these looked more like southwest tacos than mediterranean… Also you can see that in the recipe there are neither avocados nor corn included. Martha, what are you trying to pull here?

a half a cup was waaaaay too much! A quarter cup probably would be more than enough
12 olives looked like it wouldn't be enough for my olive loving family so I cut a few more. Heads up! Superstore sells pitted kalamata olives but they're not all pit-free as I realized as I chomped down hard on one with a pit.

We couldn't find "mediterranean spice" anywhere. I'm convinced it doesn't exist. Plus, if we did find it, I'm sure we'd never use a full jar of it and then we'd be wasting money. Mom mixed together oregano and basil and called it a day.
Mom is the best chicken fryer in the whole world. I don't know how she does it, but it's perfect every time. I guess I should use this frequent cooking time with her to actually watch her cook sometimes.
This is how she basted the chicken. A little balsamic in a cute cup and brushed it with the silicone brush.
We ended up using an avocado even though it wasn't in the recipe because we love avocados and we had a few that were about to go bad.
Without tzatziki.
With tzatziki. Mom and dad told me that you can actually make your own tzatziki and/or buy it fresh. I did not know this and couldn't find it anywhere but the salad dressing aisle at Superstore.
These turned out soooo good! It was a little tricky figuring out how to get the toppings to stay in the lettuce leaf but it was worth it. Also, it FEELS like it was really low fat and low carb but it's hard to tell since I don't use that nutrition fact program anymore after the black bean burger fiasco. However, aside from cooking the chicken in some oil and the tzatziki, there really wasn't anything but healthy veggies in this. Oh and the feta. Oops. If you're looking to make it low sodium too, you could omit or reduce the olives and feta, although they are pretty delicious…
Stuck to the script: oh we did pretty poorly this time… Maybe 80%? I'm just making these numbers up now (always)...
