This is what the website said it would look like. I was a bit skeptical. Maybe it was all the cauliflower I've been using lately, but that "goat cheese" looks a little suspiciously like cauliflower…
We used spinach wraps because we already had them. The recipe said whole-wheat, but… whatevs.
"What?! You can cut tomatoes with that?!?" -me
"…maybe…… looks like yes." -mom
Surprise! You can!
Caramelizing onions takes forever. I'm pretty sure I've done it before without adding sugar and salt to them and it took equally as long. I'm going to go ahead and say feel free to omit those. I learned my lesson about onions with the chili and only used a half this time. It was more than enough, especially since mom didn't even use onions on hers.
I asked mom to measure out 8oz of spinach and she replied the box only contained 5oz so no, she would not be measuring out 8oz. We didn't even end up using the whole box and it was enough.
Ok, first of all, these took almost zero time to make aside from the caramelizing. Would be good for lunch or if you didn't have too much time to make dinner. We thought these weren't going to be filling enough so we scrambled together to make a salad and some chips and salsa. Turns out these were equally as filling as they were yummy. I wanted to eat more than one because they were so delicious but I was already too full. Luckily I didn't shove the leftovers in my mouth at dinner because I heated them up the next day and they were delicious still.
Stuck to the script: like 100%! Minus the wraps… and the onion and spinach amounts… so like.. less than 100%….
